Baby, its cold outside…..so warm up with good ‘ole chicken noodle soup! This isn’t your typical Campbell’s soup though. Make this exactly how you would want it…. hearty and healthy!! I promise you won’t need anything else to go with it….except maybe some whole grain crackers;) I just had a bowl….okay maybe two….but it was awesome!
Here’s what you’ll need:
4 cups Whole Grain Rotini Noodles
5 (14.5oz) cans Low sodium Chicken Broth
1lb Chicken Breast
2 cups diced carrots
2 cups diced celery
1 chopped white onion
3 minced garlic cloves
1 Tbs grape seed oil
1 Tbs Margarine substitute (I used “I can’t believe its not butter”)
1 Tbs of Sea Salt (add more or less according to your liking…but be safe:D)
1 tsp ground cumin
1 tsp onion powder
1 tsp garlic powder
1 tsp poultry seasoning
1 tsp oregano
1 tsp ground thyme
Dice chicken and season it how you like (with the seasonings listed above). Add grape seed oil to a medium-sized skillet and turn the heat on med. Add chicken and allow it to only cook for about 5-6 mins and set aside.
In a pot, add margarine substitute and minced garlic. Heat on medium and don’t allow garlic to brown. Cook for 2-3 mins, then add celery and onions. Simmer for 5 mins the add all of the chicken broth. Once the broth is added, toss in all of your seasonings. Stir and simmer for a few mins. (This is the moment to try the broth and see if you need to add any special touches!) Add carrots, the sautéed chicken and rotini noodles. Bring to a boil then place a top on the pot and simmer on low for 8 minutes (or until the noodles are tender), and remove from heat! You’re all done!
